Quite a while ago I had a friend tell me to swap unsweetened applesauce for sugar in a recipe. For those of you that follow along you know I don’t really bake so I really have no idea if I would’ve made the recipe correctly using sugar. What I can tell you is that I made the most moist cookies I had ever made in my life. My family loved them and I didn’t even tell them what I had done. They were just crispy soft and absolutely perfect.

Years and years ago my mother found a recipe in a newspaper for a pasta dish that included the following ingredients…bacon, black olives, clams, tuna and lemons…anyone still with me? Anyone? Anyone? The recipe seems strange but trust me the end product is amazing.
- One (or two) pounds of linguini (or spaghetti)
- Half a pound of bacon
- One stick of butter
- Two lemons
- One can of tuna in water – drained well
- One can of whole baby clams – do not drain
- One can of black olives – drained well
- Parsley (fresh or dried)
- Cut the bacon into 1 inch pieces and brown it (use a BIG saucepan) – keep ¼ of the fat in the pan with the bacon
- Add stick of butter and tablespoon of parsley
- Melt butter and add can of clams with juice and can of drained black olives
- Pour over linguini (spaghetti)
- Flake one can of drained tuna over top
- Squeeze one lemon all over
- Toss lightly
- Cut one lemon into ¼s and arranged around the serving platter
As a general rule, I keep crescent rolls in my refrigerator all the time. I have also invested in some pretty nice baking stones over the years. if you have a little imagination and those two items you can use your imagination to create a snack, or take along, or food for a party.
1). Take the crescent rolls large side in and make a circle. If you want to make it a little fancier you can take each crescent roll and make it into two triangles.
2). Fill the circle with anything that you can think of that would make a good handheld snack.
A combination of pepperoni and cheese?
Sliced cheese with lunch meat?
How about chicken salad?
Chopped up apples & cinnamon with a little sugar?
I think you get the idea. All you do is preheat your oven to 350°, take a little melted butter and paint it all over the crust so that it’s very shiny, put it in the oven until it turns a golden brown check and make sure your ingredients are cooked enough and YUM!!

I love simple cooking. Less ingredients to buy and store and less figuring out at the last minute. Below is my recipe for chicken tacos – you can mess around with it for pork (carnitas) or beef. I use Ro-Tel [hack] for a lot of recipes and keep all sorts of flavors around the house for last minute meals. If you wanted beef or pork tacos the recipe is basically the same, I would add smoky seasoning, or a can of root beer (pork) or some BBQ sauce to change the flavor. The cooking instructions should be the same.
- Put 4-6 thawed and drained chicken breasts in your favorite crock pot
- Add one can of Ro-Tel – I use the one with the diced green chilis
- Cover and heat on high for four hours. Set a timer for 3 ½ hours.
- LET – IT – SIT
- When your timer goes off, shred the chicken with two forks (or a fork and tongs)
- Add half a brick of cream cheese and do not stir. I suggest you use regular full fat, generic cream cheese…nothing fancy.
- LET – IT – SIT for 30 minutes
- Stir well
Serve with any kind of taco fixings.
This week I will be sharing recipe(s) that I have tried. I promise to share only those recipes that have received my family seal of approval. Since it is the first day of the week I thought I would start with breakfast and work through dessert.
First a purchase suggestion…I like this extra large muffin pan (I do not get anything for the link…I just like this one). If you do not have an extra large muffin pan you can use a regular muffin pan or tin or you can use large ramekins.
Here are a couple ‘recipies’…really you just mix eggs and toppings or bases and make your own concoction.
- Eggs in a Basket
- Grease the bottom of 6 muffin cups
- Fill the very bottom with frozen hash browns
- Crack and egg in each cup
- Cook at 325º until the egg is fully cooked
- Sprinkle some shredded cheese on top while they cool
- Bacon and Eggs
- Heat 6 pieces of bacon on a plate (in the microwave) to heat it up – approximately 45 seconds
- Curl the bacon around each muffin cup
- Crack an egg into each cup
- Cook at 325º until the egg is fully cooked
- Denver Omelette Muffins
- Scramble 7 Eggs
- Spray each of the muffin cups
- Split the eggs between 6 muffin cups
- Chop one large or three baby peppers and add to each cup
- Other ideas
- Spinach and Eggs (add cheese at the end)
- Eggs and Sausage – chop up breakfast sausages (add cheese at the end)
I make 6-12 on Saturday and the leftovers are stored in individual storage containers. My family reheats them and eats them for breakfast or lunch. They usually make them sandwiches with sandwich thins.
